Eaten fresh with Nap Prik Pao น้ำพริกเผา or any other dipping sauce. Eaten fresh with other raw vegetables and dipping sauces. It can most easily be compared to the thinly sliced ginger served with sushi. It can also sometimes be pickled.

When well dried winter storage of the rhizome is pretty forgiving provided it’s kept cool and dry. Wet and cool temps in spring would have it rot before it sent up a shoot and down a root. I find it best to expose to light in a room temperature space and then plant it in soil. Still working on the exact best practices here. There really just isn’t enough room to keep the potted rhizome in the pot with the soil overwinter.
